Saffron Varieties

Saffron quality and grade is determined through assessment of different parameters such as:

- Length and diameter of the saffron thread (stigma)
- Saffron color
- Dehydration method

All these parameters indicate the degree of saffron coloring, aroma and its beneficial properties.

Super Negin Saffron

The trifid stigmas are detached in this saffron grade and there are no extra styles (Khameh).

In addition, there are two other features:
- Firstly, saffron must be large and the thread heads should be wide.
- Secondly, it should be dried straight without any curves or curls.

Only one-tenth of annual saffron production is Super Negin.

Negin Saffron

In Negin grade, the three stigmas are detached (the red part is detached from the white and orange parts) and only the red color is visible. Stigmas are larger, less curly, with a beautiful look and more coloring features.

Negin Saffron features:
- Stigmas are detached from each other.
- They are a pretty red color.
- Threads are relatively large.

Sargol Saffron

It is the result of sifting and cleaning Pushal or the saffron bunch in a way that only the threads are visible. Since the threads might break in the process of changing from Pushal Qalamdar or saffron bunch to Sargol, this grade is quite small and sprinkled and the ratio of weight to volume is more than other saffron grades.

Sargol Saffron features:
- Be of pretty color.
- Not to be attached to each other.
- Threads should be completely detached, red and without any white parts.

Pushal Saffron

Pushal saffron has a white style and the trifid stigmas are attached. The threads are not large but curved. It is important for this grade to be joined and coiled.
In other words, if the saffron stigma is picked from a bit lower than the red part and some part of style is along with the thread, then it is called Pushal. This grade has all the features of saffron because it is somehow a whole thread.

Pushal Saffron features:

- Be of pretty color.

- All trifid stigmas are attached.

- There is a white part at the end of the stigma.

- It has curls.

Bunch Saffron (Dokhtar peech)

It is produced by not detaching any parts of saffron threads and by arranging and drying of the whole saffron thread (including the stigma and style).

Bunch saffron features:
- This grade has all the features of saffron.
- Extraordinary aroma.
- The price of Dokhtar Peech is lower than other grades. That is why it is called the cheapest saffron.

Saffron Powder

Saffron Powder is useful and beneficial spice used in most dishes and desserts.
Saffron powder is actually produced by grinding saffron.
Ground saffron has more color than typical saffron.
